Best Mac n' Cheese ever (VeganMoFo #20)

So this is my favorite vegan mac n cheese in the UNIVERSE.  It tastes creamy!!  I make it quite a bit during the winter. 

Cook 2c. dry pasta; if you want, throw in some broccoli during the last 3 minutes of cooking.  Drain and set aside.

Make a white sauce:
1/4c. vegan margarine
1/4c. flour
1/2 tsp. salt
2 c. plain soymilk
Combine margarine, flour, and salt over low heat.  When it bubbles, gradually add the soymilk.  Cook and stir until it begins to bubble. 

Make a yellow sauce:  I usually just start putting these ingredients into the white sauce, but technically you're supposed to use another pan.
1/4 c. nutritional yeast
1/4 c. cornstarch
1 Tbsp. flour
1/2 tsp. salt
1 c. water
2 Tbsp. oil
1/2 tsp. Dijon mustard
Mix nutritional yeast, cornstarch, flour, and salt (into the white sauce).  Add water, oil, and mustard.  Stir; cook until it thickens and bubbles.

Pour sauce over noodles and mix a little to coat.  If you want to bake it:  30 mins at 375.  But I like it best straight from the pot, unbaked.
